Ingredients
2 tbsp rapeseed oil
2 onions, chopped
2 cloves garlic, minced
2 cm ginger, grated
1 tbsp cumin
1 tbsp turmeric
2 tsp cayenne pepper
2 tsp coriander seeds, ground
1 can / 400 g crushed tomatoes
1 can / 400 ml coconut milk
5 dl water
2 dl red lentils, dry
Instructions
1. Sauté the onion, garlic, ginger and spices in rapeseed oil in a pot until the onion is translucent and soft.
2. Add the remaining ingredients and let simmer gently for 30-45 minutes without a lid. Season with salt and let it rest for a moment before serving.
Serve with crispy fried potato cubes, for example.
